I made and shared two experiments for Thanksgiving Dinner. The first was requested by Monkey Boy: Apple Rhubarb Pie. It received two thumbs up from all that tried it.
All I did was add apples in place of strawberries – project success! Try it, you won’t be sorry, I will be making more because I have a lot of rhubarb in the freezer.
The second experiment: Raspberry Squash! I my first attempt at roasted garlic squash tasted great and I froze it with plans to defrost for the big day, unfortunately I forgot about it when I went upstairs to put away laundry and it scorched! (No one in the house was disappointed) I did save the day by pulling out two more bags of frozen squash, let me tell you… the Monkey’s were amazed! and not the good kind either!
So back to the Raspberry Squash. The Mr. Monkey made raspberry pancakes for breakfast with defrosted raspberries and they were yummy, but in the chaos at the stove top I accidentally stirred the squash with the raspberry juice spoon. Not to fear, I stopped as soon as I realized my error and tasted…. not bad. So I added more juice and more juice about 4 tablespoons in all. It turned out great! Two thumbs up from all that tasted it! So go for it and see if your kids will eat squash now. I don’t have any pictures of the squash, but I will leave you with an image of our local turkey. This was my first ever fresh local bird (less than twenty miles). I already want more leftovers.
